Pasta Feast

Marcus’ niece and nephew and brother have been staying with us off and on these past few days. With Erik going to college in a few days, we are trying to spend as much time with him and the rest of the family as possible.

So when it comes to meal times, I try to cook things that are kid teenager friendly, as well as somewhat healthy. Marcus is used to my cooking and my wacky ingredients. He doesn’t bat an eye at kale, nutritional yeast or chia seeds. But I decided to keep it a little more traditional when cooking for the rest of his family.

What’s a good meal that everyone enjoys? Pasta! Not only is it super easy to make, but versatile enough for picky eaters, meat free eaters and those who will eat it all.

Last night, I made a pasta feast. We had ground turkey with Italian seasoning…

Trader Joe’s ravioli…

my attempt at croissants…taste the same even if they look a little wonky…

and fresh spinach, tomatoes and mozzarella…

I had ravioli, veggies and marinara sauce, topped with nutritional yeast and garlic powder, with a busted croissant on the side.

And because everyone loves dessert, I also made the easiest brownies ever. Trader Joe’s just came out with this new brownie batter in a bag. Looks a little weird, but it’s seriously so easy!

Just gather your ingredients…I decided to add chocolate and peanut butter chips to the mix.

Pour your batter…

Add your chips…

And bake! Easy as that! The brownies aren’t earth-shattering my any means. But they passed the kid and fiance test, so I consider them a success.

If all of this seems like too much work, you can always take a nap and let someone else handle dinner. That’s what Bill likes to do. 😉
