We made it to Friday! Horray! I love Fridays. You know what else I love? Coming home to a warm house filled with the smell of veggie soup slow cooking in the crock pot. What a good way to get cozy after our snow drama.
In the morning I got to work cutting veggies (baby carrots, celery, onions, potato, leeks, corn) and preparing soup. Vegetable soup is awesome because you can add whatever you have in the fridge and pantry, and it will always taste good.
Along with all my vegetable goodness, I also added 1.5 cups of lentils, one carton of vegetable broth, one can of diced tomatoes, and salt, pepper, garlic, and cayenne to taste. Throw it all in the crock pot, put it on low, and let it work all day, while you work all day. Perfect!
When I got home I made a pot of Trader Joe’s Harvest Grain blend. One cup of grains, two cups of water, a few minutes of simmering…easy!
While the grains were cooking I threw together some homemade croutons and then it was time to eat!
The one thing I love about this soup – there was no meat but the lentil and grain combo create a complete protein. Meat is also a complete protein. This is a way to eat meat free but also ensure that you are reaping nutritional benefits.
I put the grains in the bottom of a bowl, added the soup, topped with a little bit of cheese, and finished with croutons. Super good and super filling. Marcus didn’t even mind that it was meatless and ate two big bowls!
The best thing is….leftovers for lunch today! Soup always tastes better on day two once the flavors have had time to mix up.
